I was hungry for a Chocolate Oatmeal Pie, so while researching for an oatmeal pie recipe I was surprised to see the variations in names - Hillbilly Pie or Poor Man’s Pie. A very basic pie recipe, so I get why it has been called Hillbilly or Poor Man’s Pie. BUT thank god the flavor is not basic. I took this pie to work this week and while everyone was enjoying the flavor they had their thoughts on what they would add to the next oatmeal pie that is made. Some people suggested adding Bourbon (this one had my vote), raisins, coconut, pecans, or walnuts. I think all would be yummy and would use whatever I had on hand or was craving at the time. OR better yet I would leave as is and serve with some Cinnamon Ice Cream – YUMMY!

- pie shell - 1, 9 inch
- eggs - 3, beaten
- sugar - 2/3 cup
- brown sugar - 1 cup
- butter - 2 teaspoons
- oatmeal - 1 cup
- milk - 2/3 cup
- vanilla - 1 teaspoon
- salt - 1/2 teaspoon
- chocolate chips - 1 cup
- Preheat oven 350 degrees F. Prepare pie crust in 9" pie plate, set aside.
- In large bowl, blend all ingredients except chocolate chips.
- Spread chocolate chips into unbaked pie shell, pour blended ingredients over chips.
- Bake for 40 to 45 minutes or until knife inserted in center comes out clean.
