In continuation of the United Way Campaign where I donated a pie of the month for 6 months. This is the second month and the winning team chose KEY LIME PIE. I love Key Lime Pie! It is so refreshing in these hot summer months, especially this summer. I think it is the perfect pie for August.
I know what you’re thinking….what does an Iowa girl know about Key Lime Pie. Well, I know how to read a recipe and I selected Nellie & Joe’s Famous Key West Lime Juice pie recipe to make my pie with. And I must say, it was deeeeelllliiiiiccccious.

KEY LIME PIE
9-inch pie plate
1 1/4 cups graham cracker crumbs
2 tablespoons sugar
5 tablespoons butter, melted
1 (14 oz.) cans Sweetened Condensed Milk
3 egg yolks
1/2 cup lime juice (I used Nellie & Joe’s Famous Key West Line Juice)
1/2 pint (1 cup) heavy whipping cream
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
- Preheat oven to 325°F. In medium bowl, combine graham cracker crumbs and sugar. Add melted butter and stir until evenly moistened. Press mixture into bottom and sides of a 9-inch pie plate to form crust. Bake 10 minutes or until crust begins to brown. Cool 15 minutes on wire rack.
- In medium bowl, whisk sweetened condensed milk, egg yolks and lime juice until blended. Pour filling into crust. Bake 15 minutes. Cool completely on wire rack and refrigerate
- BEAT cream, powdered sugar and vanilla in large mixing bowl with electric mixer on medium speed until stiff. Top pie with whipped cream. Chill at least 1 hour before serving – I prefer overnight as I like this pie served cold.
